Thanks Mum!

What does Mother's Day mean to you? With Mother's Day this weekend, here at the Pie Shed we've been sharing our lovely mum stories...it's definitely brought a smile to everyone's faces, a moment of reflection and a little tear listening to what everyone has to say.

 

Whether you're a mum, a grandma, a step-mum, an auntie or a close family friend, it's something most of us have been fortunate enough to have and by sheer coincidence most of the team's memories and fluffy thoughts focus on food! No surprise there....

 

Here's what the team had to say:

It has to be my mum's roast dinner. Roast lamb, cauliflower cheese, mint sauce and cranberry (in the gravy!). Growing up, Sunday lunch was sacred - no matter where you were, what you were doing...3pm was family sit down time. It's always followed by an apple and blackberry pie or crumble with custard.

Mum goes walking a lot so there's always 5million bags of blackberries in the freezer from her various hikes with freezer bags! 

My mum has a knack of making everyone feel happy, at ease and very loved. She's the heart of our family.

 

I'm lucky enough to be married to SJ, who's unconditionally 'mum'. I want to thank her for giving her life, soul and everything to our children. To treat her this weekend I'll be cooking her favourite Lamb Tagine followed by Syrup Sponge Pudding.

 

Here's a quick and easy recipe if you're looking for inspiration...

 

Lamb Tagine

 

3x lamb shanks

2 onions

6 garlic cloves

8 dried apricots

Tin chopped tomatoes

Tin cooked chickpeas

Third bottle of white wine

500 ml lamb stock

4cm knob of ginger

Bunch coriander stalks chopped off, keep the leaves

1 cinnamon stick

Big pinch saffron

1 whole lemon chopped in eighths

 

Brown the lamb, garlic, onions and ginger.

Add wine and reduce, then add everything else apart from the coriander leaves (use these to garnish at the end).

Season with maldon sea salt and cracked black pepper and bake in a tagine for 90 mins or until lamb is tender and falling from the shanks.

Give Freddy the dog the bone, then top the tagine with coriander and serve with some sauté potatoes and fresh green veg.

I love my mum's beef stew - I had some last night!

 

My mum is caring and understanding - the most patient woman you could ever wish to meet.

 

She always puts herself before others.

Mum's carrot cake is amazing.

 

She's been baking it every year for my birthday and it wouldn't be the same without it. Nothing comes close. Really moist cake with walnuts and creamy topping - amazing!

 

What I admire most about my mum is that now in her 60's, she's taken on some new and pretty big challenges, both in work and for a healthier lifestyle.

 

As a busy working mum I need her more than ever, and she's still always there for me.

I love my mum's Cottage Pie and Spaghetti Bolognese. It was always my favourite growing up and it still is today - she does a mean Steak Steam Pudding too!
